Festive Turkey and Cheddar Pie

The family will love this festive turkey & cheddar pie. A delicious way to polish off any left over turkey and use up your cheddar cheese.

Ingredients:

1 tbsp. vegetable or sunflower oil
50g Dragon butter
250g leeks, trimmed and thinly sliced
50g plain flour
400ml semi-skimmed milk
100g Dragon mature cheddar (grated)
500g cooked turkey, cut into chunks
1 tablespoon fresh flat-leaf parsley finely chopped
1 dessertspoon wholegrain mustard
6 large sheets filo pastry and 2 tablespoons of melted butter

Method:

  1. Preheat the oven to 200°C, fan 190°C, gas 5.
  2. Heat oil and butter in a large pan and cook the leeks for 10 minutes, until softened. Sprinkle in the flour, then slowly stir in the milk. Bring to a simmer to thicken and cook flour.
  3. Add the cheddar and stir until melted.
  4. Add the mustard, chopped parsley and turkey to the mixture and stir well.
  5. Pour into a 1.5 litre baking dish.
  6. Layer up 3 sheets of filo pastry sheets with melted butter, cut into wide strips and lightly scrunch them, then place on top of the pie, repeat with remaining sheets until top of pie is covered.
  7. Brush the filo with the remaining butter and bake for 25 minutes until golden.
  8. Serve with your choice of green vegetables or a crispy green salad.

Cooks Tip: Use mushrooms instead of leeks if you prefer but only cook for 5 minutes. Add other leftover vegetables such as sprouts or carro
