Asparagus with Vintage Cheddar

Springtime Cuisine: Asparagus with Vintage Cheddar

This quick, simple recipe makes a delicious Spring starter or a light lunch. Use seasonal asparagus for the very best flavour which is simply enhanced with shavings of our delicious Vintage Cheddar.

Serves 4

16 asparagus spears
Bag ready washed salad leaves
80g vintage cheddar thinly sliced
For the Dressing:
4 tablespoons extra virgin olive oil
Grated zest and juice of one small lemon (or use aged balsamic vinegar and omit sugar)
1/2 teaspoon caster sugar
Black pepper freshly ground
1/2 teaspoon sea salt

1. Prepare asparagus by snapping off the woody ends.
2. Steam asparagus for 4-5 minutes until tender.
3. Whisk all dressing ingredients together.
4. Place a handful of salad leaves on each serving plate, lay asparagus over the top.
5. Drizzle over dressing and sprinkle with Cheddar.
6. Serve immediately.
