Dragon Cheddar Recipes

Why not try these Dragon Cheese recipes. Any Dragon cheese works well with the scones, depends on your own preference.

Dragon Cheddar & Leek Pate

15g Dragon butter
1 large leek, trimmed and finely chopped
3 tablespoons half-fat crème fraiche or single cream
1 teaspoon wholegrain mustard
Dash of Worcestershire sauce
Ground black pepper
140g Dragon mature Cheddar (grated or block chopped in a food processor)

1. Melt the butter in frying pan until bubbling, add leek and sauté until leeks are tender and cooked through.
2. Add the crème fraiche, mustard, Worcestershire sauce and some black pepper. Stir well and cook uncovered to reduce liquid slightly.
3. Transfer the mixture to a blender or food processor, add the cheese and puree in short bursts until smooth.
4. Pour into a shallow serving dish and chill for at least 2 hours.
5. Sprinkle with fresh chopped chives and serve with Cheese & Tomato Scones or crusty bread.

Dragon Cheddar & Tomato Scones

250g self-raising flour
1 level teaspoon baking powder
50g Dragon salted butter
1 egg beaten & 100ml milk mixed together
10og Dragon Mature Cheddar
2 tablespoon chopped sun dried tomatoes in oil (drained weight)
1 teaspoon mixed herbs
Freshly ground black pepper

  1. Preheat the oven to Gas 7/220˚C.
  2. Sieve the flour with baking powder into a large mixing bowl, rub in the butter until mixture resembles breadcrumbs.
  3. Sprinkle in herbs and black pepper, stir through sun dried tomatoes and cheddar.
  4. Gradually add egg & Milk mixture until you have a dough, if this seems too wet do not add all the liquid.
  5. Turn onto floured surface and knead until smooth.
  6. Flatten out to approximately 3cm deep and using a round cutter stamp out scones.
  7. Bake on a tray lightly dusted with flour for 12-15 minutes until golden brown and cooked through.
  8. Serve warm and spread with Cheddar Pate or Dragon butter.
